Black Cherry Cheesecake

 I made this cheesecake to serve during the recent women gathering for Bern. The above photo was used for my new year greeting card here - not sure anyone recognise it on the first look. The cake was swept clean on that day with compliments.
 I used an earlier recipe posted here but change the filling instead of blueberry and used crust recipe from here. Reposting the recipe herewith for ease of reference in bilingual.

Makes 9" round 
BASE:
110g Butter
- melted 

200g Digestive biscuits - crushed 
50g Almond flakes - toast
1. Mix all the base ingredients and press into a springform tin. Chill.

FILLING:
500g Cream cheese
30g Butter
120g Castor Sugar
30g Cornflour
250ml Whipping Cream
4 Eggs - lightly beaten

150g Blueberry pie filling

TOPPING:
1/2 tsp Jelly powder
30ml Hot Water
150g Blueberry pie filling

METHOD:

2. Beat cream cheese and butter until smooth.
Add sugar & cornflour.
Add in cream and blend well.
Slowly adding beaten egg and mix until just combined.

3. Pour half of mixture into the prepared base.
Spread blueberry pie filling and then pour the remaining mixture.

4. Bake in water bath at 150C for 1 hour (I am too lazy to use water bath and it is ok). Let cake cool in the oven & chill overnight or at least 6 hours.

5. Mix all the topping ingredients and spread onto cheesecake.
Chill until it is set.

Cheesecake memang kesukaan ramai. Ini adalah antara resipi Along yg di gemari oleh ramai kawan2 dan AngahRuz's favourite.

Resipi ni Along dah siarkan kat sini dulu tapi Along tukar blueberry dgn blackcherry. Crust nya pula Along guna resepi yg kat sini. Along sertakan resepi asal dalam BM kali ni di sini.

Saiz 9" round
BASE:
110g Butter
- cairkan

200g Digestive biscuits - hancurkan
50g Almond flakes - panggang
1. Campurkan kesemua & tekan ke dlm tin. Sejukkan dlm peti sejuk.

 
FILLING:
500g Cream cheese
30g Butter
120g Gula Kaster
30g Tepung Jagung
250ml Whipping Cream
4 bj Telur - di pukul sedikit
150g Blueberry pie filling

TOPPING:
1/2 st Agar2 Serbuk
30ml Air Panas
150g Blueberry pie filling

CARA2:
2. Pukul cream cheese & butter sehingga sebati.
Masukkan gula & tepung jagung.
Masukkan cream & pukul sebati.
Masukkan telur sedikit2 sehingga sebati.

3. Tuangkan separuh adunan ke atas base.

Ratakan blueberry pie filling & kemudian adunan yg selebih nya.

4. Bakar 150C selama 1 jam.

Sejukkan dalam oven & kemudian sejukkan dlm peti sejuk selama 6 jam atau semalaman.

5. Campurkan bahan2 topping & ratakan ke ats cheesecake.

Sejukkan sehingga keras.

Cokodok Durian

 Another food from my hometown vacation.... I'm suffering from coughing and lost my voice since I returned from my hometown due to over-eating of durian. Not only durian was terribly cheaper compared to Miri (selling for RM25-35 per kg) we even had a lorry of free durian! There were too many durians leftover the next day that I decided to make Cokodok before they turned into Tempoyak a day later (durian can last only about two days at room temperature).

INGREDIENTS:
1 bowl Durian Pulps
1/2 bowl Flour
1 tsp Baking Powder
1 tsp Bic Soda
1/4 cup Condensed Milk / Sweeten Creamer
1/2 tsp Salt

METHOD:
Mix all & drop a pinch of the dough into deep hot oil.
Fry until brown & cooked inside.

Lagi-lagi cerita kuih sewaktu bercuti di kampung halaman.... Sonok tak terkira Along & family balik Taiping sebab durian berlambak2 sampai tak termakan-makan. Esuk nya masih ada sebusut durian, so Along pun buat lah projek Cokodok Durian sebab sayang tengok durian2 yg isi2 nya montok2 tu kalau tak di makan akhir nya akan di jadikan tempoyak sahaja.... Nak buat kek ker apa bagai susah sikit sebab  mak Along takda oven ke, mixer ke... so cokodok kan senang...hehe. Kalau kat Miri, durian mahal mak oi, sayang ler nak buat cokodok jer. Tapi cokodok ni sedap giler sebab gebusyh & kaya dgn keenakkan isi durian...emmmmmmm puas hati!

BAHAN2:
1 mangkuk Isi Durian
1/2 mangkuk Tepung
1 st Baking Powder
1st Bic Soda
1/4 cwn Susu Pekat
1/2 st Garam

CARA2:
Campurkan kesemua bahan sehingga sebati.
Jemput2kan ke dalam minyak panas.
Goreng sehingga perang & masak di dalam nya.

Kek Lapis Intan Terpilih (Sarawak Layered Cake w Cheese Crackers)

 Hi, another layered cake for this week.... please don't get bored - promise you this is the last layered cake for this week...hehe. This was another layered cake that I served during family gathering last month. The cake is layered with salted cheese crackers, producing very tasty & special flavour. This one is also a big hit amongst my family members especially the cheese lovers. Also, this cake is top seller cake in Sarawak during festive time.

From the photo, the cake looks dry but it is not - it is moist and the dryer part is the biscuits (the white layers).
Typically recipes created in Sarawak are measured using glass but I have converted the gram equivalent herewith for convenient.

Saiz 9" square
INGREDIENTS:
16oz Butter
90g Sugar
10 Eggs
1 cup Condensed Milk
1½ glass / 190g Hong Kong Flour
1 glass / 260g Serikaya (Egg jam)
200g Horlicks
½ cup Coconut Milk
1 tbsp Ovalet
1 tbsp pandan Paste 
2 packets Saltcheese Crackers

METHOD:

1. Beat butter & sugar until fluffy.
Add in ovalet and then egg one by one while beating.
Add in pandan paste, flour, horlick, serikaya, condensed milk & coconut milk.

2. Spread 6 tbsp into a lined/greased tin.

Grill until top is browned, press until the layer is even.
Repeat with another layer then arrange biscuits.
Repeat with two layers batter --> biscuits & so on until finished.

Kek ni rasa nya lemak2 masin keju & amat popular di sarawak ni terutama musim perayaan. Along buat ni untuk bawa balik ke jamuan keluarga bulan lepas, jadi dah habis licin... semua yg makan amat menggemari rasa nya....

Resepi ni Along dapat dari kampung dan sukatan yg biasa menggunakan gelas tapi Along dah convert kpd sukatan metrik untuk memudahkan sesiapa yg ingin mencuba.

Saiz 9" persegi
BAHAN2:
16oz Butter
1/2 gelas / 90g Gula
10 bj Telur
1 cwn Susu Pekat
1½ gelas / 190g Tepung HongKong
1 gelas / 260g Serikaya
200g Horlick
½ cwn Santan Pekat
1 sb Ovalet
1 sb Pes Pandan
2 bungkus SaltCheese Crackers

CARA2:
1. Pukul butter & gula sehingga kembang.
Masukkan ovalet, telur satu-persatu sambil di pukul.
Masukkan pes pandan, tepung, horlick, serikaya, susu pekat & santan.

2. Ratakan 6 sb adunan ke dlm tin yg di lapik & minyakkan.
Bakar sehingga keperangan & tekan dgn penekan kek sehingga rata.
Ulangi selapis lagi & susun biskut di atas nya.
Ulangi 2 lapis adunan & biskut sehingga sehingga habis.

Sarawak Peppermint Layered Cake (Kek Lapis Peppermint) - Again

 This is the most popular layered cake amongst my relatives when served during the recent family gathering. Few of them fought for the last piece....LOL. The cake texture was more moist and the mint flavour was stronger after few day.

 The recipe was posted earlier here.

Tip: Don't layer it too thin or else end up in dry texture.
BAHASA MALAYSIA VERSION
Kek ni Along buat untuk jamuan keluarga baru2 ni dan sangat laku sehingga berebut ketulan terakhir... (dapat kat adik tengah). Rasa kek ni lembab & berangin & lebih sedap lagi selepas beberapa hari. Sesuai di buat selepas lebihan telur putih kek lapis.

Petua: Jangan buat lapisan nya terlalu nipis, nanti tekstur nya akan jadi kering.

Banana Layered Cake with Poppy Seeds

 This is a lovely moist layered cake with delicious banana flavour and with surprise crunchy bits of poppy seeds. My relatives at the family gathering where I served it, complimented this as one of my best layered cakes. In fact each of the layered cake I brought had its own uniqueness and hard to compare so they like them all .... hehe.

 I created this recipe, adopting from the earlier recipe here, making it a bigger portion and adding poppy seeds to make it more interesting.
BAHASA MALAYSIA VERSION
Kek lapis ni Along hidangkan semasa family gathering di Taiping baru2 ni & mendapat sambutan hangat di kalangan sedara-mara termasuk lah juga kanak2....hehee. Rasa kek ni sangat lembab dan yg menarik nya ada biji2 rangup di setiap gigitan... Along telah ubah-suai dengan memasukkan poppy seed ke dalam resepi asal. So far, belum pernah terjumpa lagi kek lapis yg di bubuh poppy seed tetapi percubaan Along tidak sia2 & sangat berjaya mengambil hati sesiapa yg merasa nya.

Reseipi ni telah Along siarkan di sini dahulu tetapi kali ni Along buat portion yg lebih besar & masukkan poppy seed ke dlm nya.

Special Spicy Mayo Dip

Many who came to the women gathering last Friday asked for the recipe of my Special Spicy Mayo Dip that I served with vegetable fingers. It is something I created quite sometime ago to improve the taste of plain mayo to something of more to Asian taste bud. I made it more flavorful and also fragrant it with fried shallots, the result is awesome.

INGREDIENTS:
1 bottle (470ml) Mayonnaise
1 handful Fried Shallots - crushed finely 
1 tsp Chili Oil (put more/less to your preference) 
1/2 tsp Onion Salt
Parsley
Ground Black Pepper

METHOD:
1. Mix all ingredients until well mixed.
2. Served with vegetable fingers like carrots, celery, cucumber, chinese turnips, etcs.

BAHASA MALAYSIA VERSION
Along nak share satu resepi yg simple hasil kreasi sendiri yang mendapat sambutan dari ramai semperna acara makan-makan baru2 ini. Along buatkan rasa mayo supaya lebih aroma dan tidak jemu mencolek nya.

BAHAN2:
1 botol (470ml) Mayonnaise
1 genggam Bawang Goreng - ramas halus
1 st Chili Oil (boleh lebihkan/kurangkan, terpulang pd citarasa) 
1/2 st Onion Salt
Parsley
Lada Hitam Tumbuk

CARA2:
1. Campurkan kesemua bahan2 sehingga sebati.
2. Hidangkan dengan sayuran jejari spt karot, celery, sengkuang, timun, dll.

Women Gathering - Dec'11 & the Menu

 I organised another makan-makan occasions last Friday for our women friends to get together with Bern on her last working day before she retires. More than 30 women turned-up for the occasion. We also had some friends from KL joining. Believe it or not, I had organised two big gatherings in one week.... fiusyh....! Very glad I did it and I hope it gave good memories to Bern as a good friend and colleague who supported me a lot at works.
