Beef Lasagna

 I'm using instant lasagna skin as well as instant bechamel sauce (a gift from lovely sista friend) for this quick-to-make Beef Lasagna for our lunch last week end. As usual my two commentators in the house will have the final say and they both were just speechless with mouthful of hot juicy homemade lasagna that they claimed much more delicious than the one from expensive deli.

The instant bechamel powder produces very creamy and tasty sauce!

Size: 13" x 9" casserole
BEEF TOMATO SAUCE:
500g Beef
- minced 

4 cloves Garlic - chopped
1 Big Onion - chopped 
1 big can Tomato Puree
1 small Brinjal
- chopped

 1 cup Fresh Flower Mushrooms - chopped 
Herbs - Basil, Parsley, Mixed
1 tsp Black Pepper
Salt & Sugar


OTHER INGREDIENTS:
1 packet (500g) Instant Lasagna Sheets
1 packet Instant Bechamel Sauce Powder
200g Mozarella Cheese - grated

METHOD:
1. Heat up few tbsp olive oil, saute garlic & onion until fragrant.
2. Add in the rest of ingredients & 1 can of water.

Cook until boiled and season well.
3. Prepare instant bechamel sauce following instruction in the packet or refer here for home-made bechamel sauce.
4. Grease casserole and spread 1 cup of tomato sauce.
Arrange lasagna sheets, spread tomato sauce, bechamel sauce & grated cheese.
Repeat layering until all lasagna & sauce are used up.
5. Bake at 180C for 25 minutes until top is golden & crispy.

Ensure lasagna is properly cooked by testing with satay stick. It should feel soft when pricked.

Alhamdulillah, kenyang nya makan tengahari dengan sebekas besar Lasagna Daging. Memang puas hati kalau buat sendiri sebab lebih mewah dengan bahan2 yang di sukai. Kali ni Along guna kulit lasagna yg di beli. Kalau sesiapa rajin boleh lah buat kulit lasagna sendiri, resepi nya Along ada letak di sini. Sos bechamel pun Along guna serbuk & cuma campurkan susu je, mudah di sediakan. Serbuk bechamel ni sahabat yg kasi dah lama tapi sebab kesibukan sehingga Along boleh terlupa. TQ so much sista!

SOS DAGING/TOMATO:
500g Daging Lembu
- cincang halus

4 ulas Bwg Putih - cincang
1 bj Bwg Besar - cincang
1 tin Tomato Puri
1 bj Terung
-
cincang
1 cwn Cendawan Segar - cincang
Herba - Basil, Parsley, Campuran
1 st Lada Hitam
Garam & Gula


BAHAN2 LAIN:
1 kotak (500g) Instant Lasagna Sheets
1 bungkus Instant Bechamel Sauce Powder
200g Mozarella Cheese - sagat

CARA2:
1. Panaskan beberapa sudu olive oil & tumis bwg putih & bwg besar sehingga layu.
2. Masukkan lain2 bahan & 1 tin air.
Masak sehingga sebati rasa & mendidih.
3. Sediakam sos bechamel seperti arahan yg tertera di bungkusan atau rujuk di sini cara2 buatan sendiri.
4. Gris bekas tahan panas & ratakan 1 cwn sos tomato.
Susun kepingan lasagna, ratakan sos tomato, sos bechamel & tabur cheese yg di parut.
Ulangi susunan sehingga habis.
5. Bakar 180C selama 25 minit sehingga keperangan & lasagna masak sempurna.
Cucuk dgn lidi untuk pastikan lasagna telah masak. Jika ia masih keras, sambungkan sedikit masa lagi.

Sup Ayam Lobak



Yah…. Lobak ini mungkin tak terlalu banyak digunakan dalam masakan. Beberapa masakan populer yang menggunakan lobak sebagai hidangan antara lain soto bandung, tumislobak, atau dijadikan acar sebagai pendamping masakan di Manado.Sesuai dengan yang aku baca dari resepku enak.

Ternyatalobak juga bermanfaat untuk meredakan demam flu dan juga menjadi solusi alternatif saat Anda mengalami gejala sulit tidur loooohhhhh.
Yakin Mau masak Sup Lobak??? Ayuuuukkkkkk kita mulai

Bahan Resep Untuk Membuat
1 buah paha ayam fillet, dipotong kotak
2.000 ml air
175 gram lobak, dibersihkan, dibelah 2, diiris tipis
1/2 buah tahu cina, dipotong kotak 1x1cm
2 buah jamur kuping, direndam, dipotong-potong
3 siung bawang putih, digoreng, dimemarkan
1/4 buah bawang bombay, diiris
3 cm jahe, dimemarkan
1 batang seledri, diikat
1 1/2 sendok makan garam
1/4 sendok teh merica bubuk
1 sendok teh gula pasir
1 sendok teh pala bubuk
1 batang daun bawang, dipotong 1 cm

Cara Membuat:
  1. Rebus ayam dan air sampai mendidih. Masukkan bawang putih, bawang bombay, jahe, dan seledri. Rebus sampai harum.
  2. Masukkan lobak. Masak sampai setengah matang.
  3. Tambahkan tahu, jamur kuping, garam, merica bubuk, gula pasir dan pala bubuk. Aduk sampai matang.
  4. Menjelang diangkat, masukkan daun bawang. Sajikan hangat.

Wow..... I could say ten times wow and still not enough to describe how delicious this cake is....!!! Compared to Red Velvet Cake, this is much more superb in taste with the intense aroma and taste of pandan. I fell in love first sight the moment I saw it at the hotel just now and lucky enough to get the last piece. I will try to recreate this if I have the opportunity one day..... one piece just not enough....LOL.

Cream Puff Roll with Spicy Tuna Filling (Roll Cream Puff Inti Tuna Pedas)

 I drooled right away when I first saw this but gotta wait the right moment because I do not have many eaters in the house after the two boys left for studying. So finally made it few days ago for our evening tea but it took two days to finish it because it is a big size. Honestly speaking it is really delicious.... tasty pastry combined with spicy tuna just cannot go wrong... Hubby had three slices in one round that evening, Liana had one, UsuRaz & me had two slices each and still several slices leftover for breakfast next day.

Tin size: 10" or 11" square 
INGREDIENTS:
130g Butter
170g Water
A pinch of Salt
200g Flour
4 Eggs

SPICY TUNA FILLING:
1 can Spicy Tuna in Mayonnaise
1 Big Onion
1 Red Chili
Spring Onion

METHOD:
1. Heat up a1-2 tbsp of oil and stir-fry chopped big onion until soften.
Add in chopped chili & tuna.
Stir well to mix and off heat.
Mix in chopped spring onion (I missed out).
2. Place water, butter & salt in a pan and heat until boiling.
Off fire, add in flour and mix quickly until smooth.
Let it cool before beat-in egg one at a time.
3. Pipe batter or spread with spoon into a greased tin.
Sprinkle chopped spring onion and bake at 200C for 20-25 minutes.
4. Remove pastry from tin and rest to cool slightly.
Spread tuna filling and roll tightly.
Serve right away.

 Puff pastry gulung lebih mudah dan cepat untuk di sediakan sebab tidak perlu nak paipkan sebiji2 atau nak sumbat inti nya sebiji2. Juga kulit nya lebih tebal berisi dan tidak lampung kosong di bandingkan dgn yg bulat2 kecil. Yang penting rasa nya pasti amat sedap dengan aroma pastri dan gandingan inti yg pedas. Juga semua nya boleh di siapkan dlm lebih kurang sejam sahaja.

Resepi di bawah ni, Along telah ubahsuai sukatan kulit utk saiz tin yg Along ada.
Resepi inti nya pula Along buat resepi sendiri.
Saiz tin: 10" atau 11" persegi
BAHAN2:
130g Butter
170g Air
Secubit Garam
200g Tepung Gandum
4 bj Telur

INTI TUNA PEDAS:
1 tin Tuna Pedas Bermayonis
1 bj Bwg Besar
1 bj Cili Merah
Daun Bwg

CARA2:
1. Tumis bwg besar yg di dadu sehingga layu.
Masukkan cili yg di cincang & tuna.
Kacau sebati & padamkan api.
Gaulkan daun bawang (Along terlupa nak letak).
2.  Letakkan air, garam & butter ke dalam periuk dan masak sehingga mendidih.
Padamkan api, masukkan tepung & gaul dengan cepat sehingga rata.
Biarkan sejuk sebentar dan masukkan telur sebiji2 sambil di pukul dgn mixer.
3. Paipkan ke dalam tin atau ratakan dgn sudu.
Tabur daun bawang yg di cincang.
Bakar 200C selama 20-25 minit.
4. Keluarkan dari dulang & sejukkan sebentar sebelum di ratakan inti tuna pedas.
Gulung & hidangkan.

Red Velvet Cupcake - sedappp sangat, moist dan mudah dibuat




Assalamualaikum.
Alhamdulillah...akhirnya jumpa juga resepi Red Velvet yang super moist...sangat sedappp....nak membuatnya pun sangat mudah....tak payah guna mixer bagai, godek2 dah siap...
Sebenarnya Mas start tertarik bila tengok satu rancangan di astro tentang pencarian Red Velvet Cake yang paling sedap dan moist...memang nampak chef tu menggunakan minyak sayur dan hasil red velvet tu...sangat mengancam...moisttt
Alhamdulillah, pencarian di google berhasil juga, Mas dapat resepi dari blog Kak Azie Kitchen ....TQ sangat yerk kak...suka sangat ngan resepi ni..TQ juga pada Divas Can Cook atas perkongsian resepi yang mabeless ni....



The Best, Easy and Moist Red Velvet Cake


Bahan bahan:
2 cawan all purpose flour
1 sk baking soda
1 sk baking powder
1 sk garam
2 sb unsweetened cocoa powder
2 cawan gula kaster
1 cawan vegetable oil
2 biji telur
1 cawan buttermilk
2 sk vanilla extract
1-2 oz. red food coloring (guna 2 sb)
1 sk white distilled vinegar
½ cawan plain hot coffee (jangan skip)




Bahan bahan:
Panaskan oven pada 170C.

Di dalam mangkuk satukan tepung, baking soda, baking powder, cocoa powder dan garam. Ketepikan. 

Di dalam mixing bowl, gaul sebati gula dan minyak. Kemudian masukkan telur, buttermilk, vanilla dan pewarna. Putar sehingga sebati ( Mas guna tangan tuk kacau dan guna pemukul telur jer ) . Tuangkan coffee dan white vinegar.

Akhir sekali, masukkan tepung ke dalam adunan sedikit demi sedikit dengan diputar sebati setiap kali memasukkannya.(  Oleh kerana Mas kacau guna tangan, Mas tapis adunan tu untuk dapatkan adunan yang licin ) 

Lenser minyak dan ayak tepung ke dalam 2 loyang. Tuangkan adunan sama banyak. Bakar selama 30-40 minit atau sehingga masak. Jangan terlebih masak kerana ianya akan terus masak semasa menyejuk.

Untuk Cupcake, tuang adunan dalam jag baru tuang kedalam cup, lebih senang kan.
Bakar 20 minit atau hingga masak sahaja untuk elakkan kek menjadi kering.

Sejukkan atas wire rack sebelum diletak frosting.

Nota:
Untuk cupcake, bakar selama 18-20 minit.


Cream Cheese Frosting

Bahan bahan:
2 (8 oz) packs cream cheese - lembut
¼ cawan susu atau lebih
1 stick butter - lembut (1/2 cawan atau 4 oz)
2 sk vanilla extract
4 cawan powdered sugar

Cara cara:
Satukan cream cheese, susu, butter dan vanilla extract. Putar sehingga sebati.

Masukkan separuh dari gula, kacau sebelum  dimasukkan baki gula.

Kacau sehingga smooth dan fluffy.

Mushroom Risotto

 This is my own version of risotto, tried to cheat a bit by saving the long cooking time that typical in traditional Italian cooking. The typical procedure involves stirring stock into the uncooked rice a ladleful at a time and cooking slowly as the stock is absorbed producing creamy dish. Risotto is traditionally prepared with starchy, short-grained rice. What I did instead, I used readily cooked long-graned rice and it was ready in 10 minutes!  The menu for the dinner was Cheese on crackers, Mixed Salad with Italian Dressing, Fried Chicken and Mushroom Risotto.

INGREDIENTS:
3 bowls of Cooked Rice
1 tbsp Butter + 2 tbsp Oil
1 Big onion - sliced 
Chicken Stock
Fresh Flower Mushrooms
1 Leek
Salt & Pepper

METHOD:
1. Heat up butter & oil & stir-fry onion until soften.
Add in sliced mushroom and stir for a minute.
Add in a ladle of chicken stock, salt & pepper.
Let it boil & thicken and add a laddle of stock.
Repeat until the mushrooms taste are well blended into the cooked stock.
2. Add in leek and more stock and let it boil for a minute.
3. Add in more stock and rice; ensure it is not dry.
Once well blended, dish out & serve immediately.

BAHASA MALAYSIA VERSION
Sekali-sekala tukar selera, makan ala2 barat ler pula.... senang dan sedap jer menu Along malam tu. Risotto ni patut nya lama nak masak dia tapi Along pandai2 reka2 hentam 10 minit dah siap masak....hahaa... Apa pun hubby & UsuRaz kata sedap so ok lah kan. Kalau ikut cara tradisi memasak risotto guna beras kanji pendek & masak perlahan2 dengan masukkan stok sedikit2 sehingga beras tu masak dan berkrim. Along lak hentam je beras panjang siam & nak cepat masak, along guna nasi dan bukan beras.

Selain daripada Risotto cendawan, Along juga sediakan kraker dgn keju Reypanaer, Salad dgn Sos Itali dan Ayam Goreng.

BAHAN2:
3 mangkuk Nasi
1 sb Butter + 2 sb Minyak
1 bj Bwg Besar - hiris 
Stok Rebusan Ayam
Cendawan Bunga
1 btg Leek
Lada Hitam
Garam

CARA2:
1. Panaskan butter & minyak & tumis bawang sehingga layu.
Masukkan cendawan & kacau sebentar.
Masukkan sesenduk stok ayam, garam & lada hitam & didihkan.
Ulangi dengan menambahkan sesenduk stok ayam & didihkan sehingga pekat & perisa cendawan sebati.
2. Masukkan leek & tambahkan stik sehingga mendidih & pekat.
3. Masukkan lagi stok ayam dan nasi dan masak sehingga sebati & lembab.
Hidangkan segera.
