Basil Chicken in Green Chili Paste

 I just love Basil leaves flavour and enjoying my overgrown basil leaves from the backyard.... so today I created another dish with basil leaves.... it was awesome despite the plain look! The dish is full of rich flavour... the sweetness of the chicken is further enhanced by the basil and lemongrass fragrant.

Serves 5 persons
INGREDIENTS:
1/2 Chicken - cut 
6-8 Green Chilies*
6 Green Chili Padi*
6 cloves Garlic* (* minced) 
1 Lemongrass - bruised 
1" Ginger - sliced 
1 Big Onion - sliced 
1 tbsp Fish Sauce
2 tbsp Oyster Sauce
1 Tomato - cut 
Lots of Thai Basil Leaves
Salt

METHOD:
1.  Heat up few tbsp oil & saute minced ingredients* until fragrant.
Add in lemongrass, ginger & onion & stir for few more minutes.
Add in chicken, fish sauce & oyster sauce and stir until mixed well.
Add a bit of water if chicken stick to the bottom of pot.
Cover until chicken is nicely cooked.
2. Balance the taste & add salt if necessary.
Add in basil leaves & tomato.
Stir until well mixed & dish out.
3. Serve with white rice.

Along ni masih belum puas2 lagi dengan keenakan daun selasih dan lagi pun kebun daun selasih kat belakang rumah tengah menjadi2 gemuk nya, lagi lah geram nak memasak nya. Di harap anda semua tak jemu pula ya... kalau sesiapa yg belum pernah memasak lauk dgn daun selasih ni, harus lah mencuba nya tau.... Lauk ni sedap amat pada selera Along di kala tekak tak lalu nak makan lauk2 yg berlemak. Anak2 semua pun cakap sedap. Kemanisan ayam amat terasa bila masak simple2 macam ni di tambah pula dgn aroma daun selasih & serai.

Ayam Daun Selasih Masak Cili Hijau
Hidangan 5 orang
BAHAN2:
1/2 ekor Ayam - potong2
6-8 biji Cili Hijau*
6 biji Cili Padi Hijau*
6 ulas Bwg Putih* (* tumbuk kasar) 
1 btg Serai - ketuk
1" Halia - di hiris
1 bj Bwg Besar - di hiris
1 sb Sos Ikan
2 sb Sos Tiram
1 bj Tomato - di potong
Daun Selasih - seberapa byk yg suka 
Garam

CARA2:
1.  Panaskan beberapa sudu minyak & tuis bahan tumbuk* sehingga wangi.
Masukkan serai, halia, bwg besar & kacau sebentar.
Masukkan ayam, sos ikan, sos tiram & kacau sebati.
Masukkan sedikit air supaya tidak melekat di dasar periuk.
Tutuup sehingga ayam betul2 masak.
2. Tambahkan garam jika tidak cukup masin.
Masukkan daun selasih & tomato, kacau beberapa minit.
3. Hidangkan dgn nasi putih.

Dah seminggu Along tak ke udara.... badan letih-lesu sebab asyik pulang lewat dari pejabat setiap-hari.... pulang rumah, masak macam biasa tapi tak sempat lah nak tonggeng2 amik gambar bagai sebab orang rumah semua kelaparan. Basil Sweet Sour Fish (Ikan Masak Masam Manis Daun Selasih)

No one in the house will complain even if I were to cook Sweet Sour Fish everyday.... of course I will not insanely cook the same dish everyday... not even for two days in a row.... but that is just to describe how much the boys in the house love it. Once they see it came out from the kitchen, the fist word was "hooray!".

This time I tried to make slight variation than the usual sweet sour dish. You can search few versions that I posted earlier. Today's version is flavored with fresh basil leaves that I plucked from my very own garden.

Serves 5 persons
INGREDIENTS:
1 whole Fish (weighted about 800g) 
1/2 tsp Turmeric Powder
4 cloves Garlic - pounded
 2 tbsp Chili Paste
2 tbsp Tomato Sauce
2 tbsp Chili Sauce
1/2 cup Water
1 tsp Cornflour + some water
1 Big Onion - sliced
Pineapple - cubed
Mixed Veg
A bunch of Basil Leaves
Salt & Sugar

METHOD:
1. Rub fish with salt & turmeric powder & deep fry until cooked.
Place it on a serving plate.

2. Heat up few tbsp oil & stir fry pounded garlic until fragrant.
Add in chili paste & fry another minute.
Add in tomato & chili sauce.
Add in water or more/less to the amount of gravy that you prefer & thicken with cornflour paste.
Let it boil, add salt & sugar to taste.
Add in the rest of ingredients & boil for a while.

3. Pour sauce on top of fried fish & serve immediately with white rice.

Pokok selasih Along menjadi2 dan sangat gemuk..... oleh sebab orang rumah ni suka sangat makan Ikan Masak Masam Manis, Along pun cuba2 lah masak campurkan daun selasih.... sedap bau nya.

BAHAN2:
1 ekor Ikan Tilapia (+/- 800g) 
1/2 st Serbuk Kunyit
4 ulas Bwg Putih - tumbuk 
2 sb Cili Mesin
2 sb Sos Tomato

1 st Tpg Jagung + sedikit air
1 biji Bwg Besar - hiris

Nenas - potong kecil

CARA2:
1. Lumur ikan dgn garam & serbuk kunyit.
Goreng sehingga masak garing & letak atas pinggan.

2. Panaskan sedikit minyak & tumis bwg putig yg di tumbuk sehingga wangi.
Masukkan cili mesin & tumis sehingga garing.
Masukkan sos cili & tomato.
Masukkan air kurang/lebih setakat mana kuah yg di kehendakki & pekatkan dgn tpg jagung.
Biar menggelegak + garam & gula.
Masukkan bhn2 lain & masak sebentar lagi.

3. Tuangkan kuah ke atas ikan goreng tadi & hidang segera dgn nasi putih.

Have you heard about FoodPorn terminology? The name may sound sexual and provocative for some who have not been into the latest world development of food presentation and media. Let me share the description from wikipedia:

"Food porn is a glamourised spectacular visual presentation of cooking or eating in advertisements. infomercials, cooking shows or other visual media, foods boasting a high fat and calorie content, exotic dishes that arouse a desire to eat or the glorification of food as a substitute for sex. Food porn often takes the form of food photography and styling that presents food provocatively, in a similar way to glamour photography or pornographic photography."

One day, the team of FoodPorn website wrote to me inviting my Grilled Salmon with Butter Sauce to join their website publication. I just couldn't believe that such a humble photo of mine would qualify but nevertheless submitted as requested. At the same time I felt quite embarrass to compare to many other photos which are far more superior in quality and wittiness of the participating blogs. My photos were often just a candid shot with not much preparation and planning due to my limited time in preparing dinner after office hours. I also felt that I do not babble enough perhaps and usually just put few sentences accrossed - it all I can afford to do in limited time of my daily life that I have and to balance with other priorities in life....

Blogging makes me happy and relief much stress.... the joy of sharing and able to contribute to other happiness.... the joy of extending network beyond my physical contacts..... the joy of receiving appreciation and friendship..... and so on. I am so delighted that been accepted to join the rest of the world in such a high profile food website..... thank-you so much to Ms Nina for the invite and appreciation of my humble site.

Pancakes

 Hi everyone...! Sorry for disappearing in the last few days and not answering questions or returning visit. I was so busy including travelling on business and health has been a bit on the low side lately.

I got up very early this morning to prepare breakfast for my son, UsuRaz before he went to college and managed to snap some photos to share with you.... he enjoyed it so much and almost finished off all the 10 pieces by himself but left a couple of pieces for Liana.

This recipe is so easy that you can prepare and serve in short time while rushing in the morning.

Makes 10 pieces (3¾" diameter each)
INGREDIENTS:
100g Flour
2 tsp Baking Powder
2 tsp Sugar
1 Egg
125ml Milk
1 tbsp Butter - melted 

METHOD:
1. Place all in a blender & process until smooth.
2. Heat up a non-stick pan & pour a scoop of the batter.
Let some bubbles appear on surface and break (see photo below).
Flip & cook for several seconds and lift out.
Cook remaining batter.
3. Serve with your favourite topping/syrup/fruits.

Served with choc ganache, maple syrup & kiwi fruit

Mungkin ada kalangan anda yg ingat yg Along pernah kongsi resepi penkek kat MyResipi pd tahun 2007 dulu kat sini. Ramai yg mencuba dan puas-hati. Kali ni Along kongsikan resepi yg berbeza sedikit tapi tetap sedap dan gebu. UsuRaz sorang jer makan sampai 8 keping!

BAHAN2:
100g Tepung Gandum
2 st Baking Powder
2 st Gula
1 bj Telur
125ml Susu Segar
1 sb Butter - cairkan 

CARA2:
1. Blend kesemua bahan2 sehingga sebati.
2. Panaskan kuali leper yg tidak melekat.
Tuangkan sesenduk adunan di tengah2 kuali.
Biarkan sehingga terbit buih2 udara & memecah baru balikkan sebentar (lihat gambar di atas).
Angkat & ulangi sehingga habis adunan.
3. Hidangkan dgn topping/sirap/buah2an kegemaran anda.

Mi Kari Kerang (Curry Noodles with Cockles)

 Cockles are very expensive in Miri compared to West Malaysia's price i.e. RM8/kg where else in WM is only RM1.50/kg. Anyway, I bought a kg to cook our favourite curry noodles.
 I still use the same recipe here except that I've replaced chicken with cockles.

Serve 5-6 persons
INGREDIENTS: 
5 Shallots*
4 cloves Garlic*
1/2" Ginger* (* blended)
Mixed Spices (Cinnamon, Cloves, Cardamon & Star Anise)
2 tbsp Chili Paste
2 tbsp Curry Powder
1 kg Cockles - blanced in boiling water & remove shell
1/2 can Evaporated Milk 
1/2 pot Water
1 Maggee Chicken Cube
Fish Cakes/Balls
Fried Beancurd
Salt
1 kg Fresh Yellow Noodles
Garnishes - Lime, Chilies, fried onion

METHOD:
1. Heat some oil & stir fry mixed spices & chili paste until fragrant.
Add in curry powder & blended ingredients and for a while until fragrant.
Add in evaporated milk, water & chicken cube and stir until boiling.
Add in cockles, fish cake/balls and bean curd.
Add salt to taste & boil for a while.

2. Serve blanched noodles with curry gravy, topped with garnishes.

Meh jemput makan Mi Kari Kerang.... waduh2... 3 pinggan pun boleh hirup sampai licin....hehehe. Along masak resepi yg selalu Along buat - dah kongsi dulu kat sini cuma ganti bahan ayam dgn kerang.

Hidangan 5-6 orang
BAHAN2:
5 ulas Bwg Merah*
4 ulas Bwg Putih*
1/2" Halia* (* blend)
Rempah Tumis (Kulit Kayu, Pelaga, Bg Lwg, Cengkih)
2 sb Cili Mesin
2 sb Serbuk Kari
1 kg Kerang - celur dgn air panas & kopek isi nya 
1/2 tin Susu Cair Evaporate 
1/2 periuk Air

1 Kiub Ayam Maggee
Fish Cakes/Balls
Tahu Goreng
Garam
1 kg Mee Kuning
 Bhn Tabur - Limau, Cili & Bwg Goreng

CARA2:
1. Panaskan minyak & tumis rempah & cili mesin sehingga wangi.
Masukkan kari, bhn blend & kacau lagi sehingga wangi.
Masukkan susu, air, kiub ayam & kacau sehingga mendidih.
Masukkan kerang, fish cake/balls, tahu & garam.
Masak sehingga naik rasa.

2. Hidangkan mee yg di celur dgn kuah & bhn tabur.

Heavenly Milo & Oreo Jelly (Agar-Agar Milo Lapis Oreo)

 I created another version of jelly again.... I love playing with jelly creation which you can find many sorts in my earlier postings. This is really crazily delicious.....! I was so excited on my first bite! The second and subsequent bites just make me crazy for more..... You gotta try this if you are chocolate lovers!

The idea came through when I wanted to make dessert for our family picnic yesterday. AlongRiz has a very limited personal choice of menu with too many ingredients are no-no for him.... Anyway, he loves drinking milk & milo and his favourite biscuits are anything chocolate based. My hubby suggested Milo Jelly but I thought adding some Oreo cookies to the layers will be something more interesting.

Makes: 8" square
INGREDIENTS:
1 packet / 10g Jelly Powder (Agar-Agar Powder)
750ml Water
160g Sugar
1 can (400g) Evaporated Milk
3/4 cup Milo Powder
1 pack (137g) Oreo Cookies - break into small pieces but keep the sandwich together 

METHOD:
1. Place jelly powder and water in a pot & cook until jelly is dissolved.
Add in sugar & cook until sugar is dissolved.
Add in milk, stir well & off fire once boiled.

2. Separate 2 cups of the mixture into another pot & add in Milo powder.
Stir well until milo is dissolved.

3. Pour 1cup of Milo mixture into a square container and let the remaining half warm up on smallest fire.
Let it set slightly on surface before pouring another layer.
Pour the plain mixture on top.
Sprinkle oreo cookies & let is set on the surface.
Pour the remaining milo mixture.

4. Let it set completely at room temperature before chiiling it in fridge.
Serve cold.

TIPS FOR LAYERING:
a. Do not wait until the layer is completely set before pouring the next layer, or else it will not stick. If happened, scratch surface with fork before pouring the next layer.
b. Make sure the mixture is still hot when pouring on the earlier layer so that it will stick well.

BAHASA MALAYSIA VERSION
Hari ni Along nak kongsikan satu lagi resipi agar-agar yg Along rekakan khas untuk selera AlongRiz yg memang suka minum milo dan makan biskut coklat. Gembira nya hati Along sebab terkejut dengan kesedapan agar2 ni.... adoi pejam2 mata makan ni... lagi banyak makan lagi sedap.... isyk2! Makan pula di tepi pantai dengan angin bertiup segar.... walaaaa....

Saiz: 8" persegi
BAHAN2:
1 bungkus / 10g Jelly Powder (Serbuk Agar-Agar)
750ml Air
160g Gula
1 tin (400g) Susu Cair
3/4 cup Serbuk Milo
1 bungkus (137g) Oreo Cookies - patah2kan tp biarkan sandwich 2 lapis

CARA2:
1. Masak serbuk agar2 & air sehingga larut.
Masukkan gula & masak sehingga gula larut.
Masukkan susu, kacau sebati sehingga mendidih.

2. Asingkan 2 cwn  ke dlm periuk yg lain & campurkan milo sehingga sebati.

3. Tuangkan 1 cwn campuran milo ke dlm acuan.
Panaskan campuran milo yg separuh lagi dgn api paling kecil supaya tidak membeku.
Apabila permukaan nya mengeras sedikit, tuangkan kesemua adunan putih tadi.
Taburkan biskut oreo.
Apabila permukaan nya mengeras sedikit, tuangkan baki adunan milo tadi.

4. Biarkan membeku di suhu bilik sebelum masukkan ke dlm petisejuk.

TIPS UNTUK MELAPIS:
a. Janagn tunggu sehingga lapisan membeku sepenuh nya sbb takut lapisan tidak melekat.
Jika membeku semua, guris2kan permukaan dgn garfu sebelum tuangkan lapisan seterus nya.
b. Pastikan adunan masih panas apabila menuang ke atas lapisan sebelum nya supaya ia melekat dgn baik.
