Made this delicious cake again and this time was for colleague in the office..... very good feedback from everyone and they agreed indeed it was delicious.... moist cake with surprise chunky apples in it makes it tastes almost like apple pies! One of my colleague, Chai said it is even better than the apple pie that I made before....LOL!

Baked Mung Bean Kuih (Bingka Kacang Hijau)
This is my favourite & I ate most of it by myself.... packed some for AngahRuz to bring back to KL, Liana & hubby ate some and UsuRaz coundn't bother.... I enjoyed every bite of it and took me days before I can clear all the remainings.
The taste is lovely.... rich with green beans taste and moderate sweetness.... I didn't regret I got to eat most of them....LOL!

Stir above small fire for about 5 minutes until slightly thicken.

3. Pour the batter & sprinkle sesame seeds.

Sambal Tomat
Sering kali sambal digunakan sebagai pembangkit selera makan. Sehingga bila tidak ada sambal dalam menu makan anda rasanya kurang Komplit. Sambal tomat biasanya sambal untuk menemani makan ayam bakar, ayam goreng, ikan bakar atau ikan goreng bahkan pecel lele atau pecel ayam belum pas bila tidak memakai sambal tomat.
Berikut adalah Resep dan Cara Membuat Sambal Tomat yang mantap:
Bahan yang dibutuhkan:
2 buah cabai merah besar
3 buah cabai rawit merah
4 butir bawang merah
2 siung bawang putih
2 buah tomat, cincang halus
1 sdt garam
1 sdt gula pasir
25 ml air
minyak untuk menumis
Cara membuat Sambal tomat:
1. Haluskan cabai merah besar, cabai rawit merah, bawang merah, dan bawang putih.
2. Panaskan minyak, tumis bahan yang telah dihaluskan hingga harum.
3. Tuang air, masukkan tomat.
4. Tambahkan garam dan gula pasir. Masak hingga mengental.
5. Angkat, sajikan.
Cukup mudah bukan? anda dapat membuatnya sendiri sesuai selera.

Nasi Gandul Khas Pati Jawa Tengah
Sebagai gantinya dalam resep kali ini akan digunakan daging sapi sebagai pengganti jeroan sapi.
Adapun cara membuat nasi gandul antara lain :
Bahan-bahan yang dibutuhkan :
1. 500 gram daging sapi.
2. 1 ½ liter santan cair atau encer.
3. 1 batang serai (geprak dan memarkan).
4. 2 lembar daun salam.
5. 1 ruas lengkuas kira-kira 2 cm.
6. Minyak goreng digunakan untuk menumis.

10. 1 sdt terasi bakar.
11. garam halus secukupnya.
12. ½ sdm gula merah kemudian sisir halus.
2. 4 siung bawang putih.
3. 3 buah cabai merah keriting.
4. 3 butir kemiri sangrai.
5. ½ sdm ketumbar sangrai.
6. 1 sdt merica halus.
7. 1 sdt jintan.
8. 1 ruas kencur kira-kira 1 cm.

Cara membuat :
- Pertama, bersihkan daging sapi kemudian potong-potong daging berbentuk dadu kecil. Lalu tiriskan.
- Selanjutnya, panaskan minyak goreng kemudian tumis bumbu yang dihaluskan bersama dengan serai, daun salam dan lengkuas. Tumis bahan-bahan tersebut hingga harum.
- Setelah itu, rebus santan yang telah disiapkan bersama dengan potongan daging sapi dan bumbu yang telah ditumis tadi. Rebus hingga mendidih dan daging terasa empuk.
- Cara penyajiannya, siapkan selembar daun pisang yang telah dibersihkan lalu taruh diatas mangkuk atau piring saji, kemudian tambahkan nasi dan tuangkan pula rebusan daging sapi tadi bersama kuahnya.

Baked Macaroni (Makaroni Bakar)
I love this tasty Baked Macaroni.... so did all the guests... I made this in two separate occassions and received many compliments for it! One time was served during Iftar with relatives and the second time was during Hari Raya open house for my boys' friends.

Size: 10"x14" / 12"x16"
INGREDIENTS:
500g Macaroni - boil until ala dente
5 Shallots*
3 clove Garlic*
½" Ginger*
1 tbsp Black Pepper* (* pounded)
3 tbsp Curry Powder
500g Minced Meat/Chicken
1 can Evaporated Milk + 1 can Water
4 Eggs - slightly beaten
½ tsp Sugar
Salt
For sprinkle on top - chopped Chinese Celery, Spring Onions, Red Chilies, Fried Onions, Grated Cheese
METHOD:
1. Heat up some oil & stir-fry pounded ingredients* until fragrant.
Add in meat, sugar, salt & stir until cooked.
Off the heat.
Add in macaroni, milk, water (optional + grated cheese).
2. Pour macaroni into a casserole.
Sprinkle beaten egg on top followed by ingredients for sprinkle.
3. Bake 180C for 30-40 minutes.
NOTE:
Optionally can add chopped mushroom, capsicum & tomato.

Black Glutinous Rice Dessert made in Noxxa Cooker (Bubur Pulut Hitam)
Slowly clearing my late entries..... this was made about a month ago during Ramadhan.... nothing special, just a repeat menu but want to share my new toy - Noxxa Multi Pressure Cooker! Ever since I bought this two months ago, it has been put into full use almost everyday! It is very convenience to use and I can throw away many of my other posts namely my conventional AMC pressure cooker (although this costs 10X more expensive), my slow cooker, my Le Gourmet cast iron pots, my electric multi-cooker, my collection of non-stick pots and many more! Thanks sis Hanifah for promoting this and helped me to purchase from her membership.
Cooking black glutinous rice only takes 20 minutes instead of hours boiling in conventional pot, without pre-soaking is necessary. The pot is non-stick and the cover is easily detached making cleaning job is just a breath.
Working mum like me will love this kind of equipment.... soon after I get home, I just threw meat/chicken into it, set the timer, went upstairs for shower & the dish is ready when I returned to kitchen later. I can also keep it in there for whole day and the food remains warm (very important as I do not like consuming cold food).

Panjang lak terbebel in BI tadi.... secara ringkas nya, memasak Bubur Pulut Hitam menggunakan periuk Noxxa ni amat mudah dan cepat. Bubur dah siap hanya dalam masa 30 minit dan rasa nya pun manis enak.
Meh tengok camna nak masak bubur ni dalam periuk Noxxa. Kalau takda periuk Noxxa, boleh buat bubur ni dlm periuk biasa seperti di sini.

Mango Pudding (Puding Mangga Lemak Harum)
Another jelly creation from me.... this looks simple but truely delicious and mouth watering! I made it to serve my sons' friends during Idh open house. I had last batch of mangoes from our tree and wanted the jelly to be creamy so I added coconut milk to the jelly mixture.... it was surprisingly blended well with pureed mango and truely delicious... in fact I gave compliment to my own self that this is the most delicious mango pudding that I ever had....LOL! The guests gave thumbs up while slowly indulging into the smooth and cold dessert!
The mango I used is very sweet, so adjust the sugar to your taste depending on sweetness of the mango that you use.

1 packet (13g) Jelly Powder
1100ml Water
230g Sugar
200ml packet Coconut Cream*
1 Egg* (* blend)
1 cup Mango Flesh - pureed with 1 cup water
1 cup Chopped Mango
METHOD:
1. Boil jelly powder and water until dissolved.
Add in sugar & stir to dissolve.
Add in pureed mango and coconut cream mixture*.
Stir few more minutes until well mixed.
2. Sprinkle chopped mango in a mould.
Pour the jelly mixture and let is set at room temperature.
3. Serve chilled.

Satu lagi rekaan agar-agar atau puding yang Along nak kongsikan di sini. Ini bukan alang-alang puding mangga biasa tau.... ia nya amat harum lemak manis berperisa.... Along buatkan ni dengan secara kebetulan sahaja. Anak2 Along ajak kawan2 datang beraya ke rumah dan kebetulan ada buah mangga dlm petisejuk dan Along bayangkan puding yang lemak berkrim jadi Along masukkan santan kedalam masakan agar2 tu.... tak sangka ia nya amat sedap sekali. Kekawan bebudak tu semua nya puji tak henti2..... alhamdulillah.
Buah mangga yg Along guna ni manis, so adjust ler gula tu ikut selera anda ya.

Tuangkan masakan agar-agar ke atas nya dan biarkan beku di suhu bilik.
Sejukkan di dlm petisejuk sebelum di hidangkan.

50 gram jus pandan sejuk ( dari peti ais )
2 sudu makan ovelet
1 sudu kecil esen vanilla
75 gram mentega - dicairkan
Cara²
Masukkan semua bahan-bahan kecuali mentega cair dan putar.
Putar dengan kelajuan sederhana sehingga pekat dan putih.
Akhir sekali masukkan mentega cair. Putar lagi sehingga sebati dan pekat.
Sediakan acuan yang telah dialas dengan kertas minyak atau yang telah disapu dgn sedikit butter.
Bakar dalam acuan dengan menggunakan kaedah waterbath dengan api atas dan bawah selama 45 minit ke 1 jam dengan suhu 150°C.
Bila sudah masak biarkan sejuk.
Bila dah sejuk, potong di tengah-tengah kek supaya menjadi dua bahagian menggunakan benang .
Sementara tunggu kek sejuk sepenuhnya, bleh la sediakan lapisan kastadnya.
Puding Kastad
Resepi : DapurKu Sayang - Kak Dayang
Bahan2
6 tbsp tepung kastad
1 1/2 tsp serbuk agar-agar
750ml santan @ susu cair - akak gabungkn kedua-duanya
150gm gula pasir - bleh kurangkn sedikit lg sbb bg akak manis la
2 tbsp mentega
1 tsp pandan paste
sedikit pewarna hijau
Cara :
Kek span di hiris kepada 2 bahagian. Ketepikan
Untuk membuat kastad, campurkan kesemua bahan Puding Kastard dalam periuk.
Masak atas api sederhana hingga adunan pekat dan meletup2 kecil..
Sediakan acuan bulat atau petak, guna jenis loose tin atau apa jer bentuk kek span kita..
Letakkan satu lapisan kek span dalam acuan. tuangkan 1/3 aduan kastad keatas kek hingga menutupi lubang di sekelilingnya
Letakkan lapisan kedua kek span dan tuang lagi kastad.
Hentakkan acuan 3 kali di atas meja yang agar kastad padat dibahagian bawahnya, biarkan kek sejuk baru dimasukkan dalam peti sejuk
Keluarkan kek yang telah sejuk dari acuan .
Salut dengan kelapa kering atau hias mengikut citarasa anda..

Chicken dishes will always be a repertoire in my house.... especially this particular one.... bite size chicken meat coated with spiced flour, fried to just right crispiness to ensure tenderness and juicy inside then served with favourite sweet sour black pepper sauce!.... specially cooked to please my three hungry boys....LOL!

INGREDIENTS:
1 Chicken Breast - cut to bite size
4 tbsp Flour + ½ tbsp Curry Powder
3 cloves Garlic - pounded
3-5 Green Chilies*
1 Big Onion*
2" Ginger* (* sliced)
5 Kaffir Lime Leaves - shredded
1 tbsp HoiSin Sauce
1 tbsp Oyster Sauce
1 tbsp Black Pepper Sauce
2 tbsp Soy Sauce
1 tbsp Cornflour + 2 tbsp water
1 Tomato - cubed
Salt, Sugar
METHOD:
1. Rub chicken pieces with salt and flour mixture.
Deep fry until cooked & crispy on the outside.
Keep aside.
2. Heat up some oil & stir fry pounded garlic until fragrant.
Add in sliced ingredients*, lime leaves and stir until fragrant.
Add in all types of sauce, ½ cup water, salt & sugar. Let it boil.
Add in tomato & cornflour paste.
Cook several minutes until sauce is thicken.
3. Pour sauce over the fried chicken pieces.
Serve with rice immediately.

Anak2 Along makan lauk ayam setiap hari pun takpa & tak jemu2.... tambahan pula bila ada AlongRiz bercuti yang tak pandai makan selain ayam.... AlongRiz pun dah kembali semula ke Pennsylvania, USA beberapa hari lepas.... ni lauk tayangan lewat.
Memang gembira betul anak2 Along 3 org tu bila Along masak lauk macam ni.... ayam nya mudah nak makan sebab di potong kecil dan di goreng rangup dengan perisa rempah.... dan di gandingkan dgn kuah black pepper yg pedas, masam dan manis.... memang sedap!

1 ketul besar Dada Ayam - di potong kecil
4 sb Tepung + ½ sb Serbuk Rempah Kari
3 ulas Bwg putih - di tumbuk
3-5 biji Cili Hijau*
1 bj Bwg Besar*
2" Halia* (* hiris)
5 helai Daun Limau Purut - di koyak2
1 sb Sos HoiSin
1 sb Sos Oyster
1 sb Sos Black Pepper
2 sb Kicap
1 sb Tepung Jagung + 2 sb Air
1 bj Tomato - potong dadu
Garam, Gula
CARA2:
1. Lumur ayam dgn garam dan campuran tepung.
Goreng sehingga masak dan rangup luaran nya.
Ketepikan dahulu.
2. Panaskan sedikit minyak & tumis bwg putih sehingga wangi.
Masukkan bahan2 yg di hiris*, daun limau dan kacau sehingga wangi.
Masukkan kesemua sos, ½ cwn air, garam & gula.
Kacau sehingga mendidih.
Masukkan tomato & bancuhan tepung jagung.
Masak sehingga kuah nya pekat.
3. Tuang sos ke atas ayam yg telah di goreng tadi.
Hidangkan dengan nasi putih dengan segera.

Baked Wrapped Pomfret (Pais Bawal)
Sometimes pomfret sold in market is not so fresh.... turning them into "Pais" i.e. wrapped with spicy coconut will make it tastier.....
