Kuih Kasturi Kacang Merah (Fried Red Bean Dumpling)

 This kuih is known as Kuih Kasturi aka Kuih Rengas is normally made of grean beans but I tweaked it with red bean instead in order to clear the red bean stock.... the outcome is fabulous!

FILLING INGREDIENTS:
1 cup boiled Red Beans
½ cup Sugar
2-4 tbsp Grated Coconut (up to you to put less/more, some people do not like adding coconut) 
3-5 tbsp Flour (put less/more just enough to form a ball, I put more because my red beans a bit watery after been frozen) 
BATTER:
½ cup Rice Flour
1 tbsp Custard Flour
½ tsp Edible Lime Paste
Water & Salt

METHOD:
1. Mix well all the filling ingredients.
Divide into small balls.
2. Mix all the batter ingredients with water just enough to form runny batter for dipping.
3. Heat up oil for deep frying.
4. Flatten the red bean ball slightly, dip the bean balls in batter & fry until golden colour.

Pernah lihat Kuih Kasturi aka Kuih Rengas guna kacang merah tak? Along belum pernah jumpa lagi tapi pandai2 sendiri lah nak reka2 kan sebab nak habiskan stok kacang merah dalam freezer. Tak sangka sedap sesangat guna kacang merah & hubby yg paling banyak makan sebab kuih ni memang fevret dia.

BAHAN2 INTI:
1 cwn Kacang Merah yg telah di rebus
½ cwn Gula Pasir
2-4 sb Kelapa Parut (ikut suka nak letak byk mana, sesetengah org tak suka rasa kelapa) 
3-5 tbsp Flour (agak2 byk mana cukup2 supaya campuran boleh di bulatkan. Along guna kcg merah yg telah di bekukan, so kena letak lebih tepung sbb lembik) 
TEPUNG GORENG:
½ cwn Tepung Beras
1 sb Tepung Kastad
½ st Air Kapur
Air & Garam

CARA2:
1. Campur sebati kesemua bahan2 inti.
Bulat2kan kecil.
2. Bancuh bahan2 tepung goreng - biar sedikit pekat supaya melekat apabila di celupkan bebola kacang tu nanti.
3. Panaskan minyak dalam untuk menggoreng.
4. Penyekkan sedikit bebola kacang, celup ke dlm tepung goreng & goreng sehingga keperangan.
