Eggless Fruit Cake

 Another project for belated CNY party to be held in the office this week.... Despite eggless, the cake is soft and crumbly i.e. resemble butter cake texture. Specially nice while it is still hot from the oven.

INGREDIENTS:
250g Butter*
250ml Evaporated Milk*
170g Caster Sugar or Brown Sugar*
(HomeKreation: I mixed half/half)
2 tbsp Condensed Milk or Golden Syrup*
300g Mixed Fruits (chopped)
360g Plain Flour**
2 tsp Baking Powder**
1 tsp Soda Bikarbonate** (** sift 3x)
125ml Orange Juice (HomeKreation: I used half sunquick + half water) 
30g Chopped Almond - optional (HK: I replaced with coconut flakes)

METHOD:
1. Mix ingredients* in a pot & cook until dissolved.

Off fire & add in mixed fruits, stir well.
Leave to rest for 4 hours or overnight until fruits float.

2. Mix flour into the mixture above with wooden spatula.
Add in orange juice & mix well.
 

3. Pour into greased & floured tube pan.
(Use tube pan for even cooking and avoid uncooked in the middle)
Sprinkle chopped almond.
Bake 160C for 40-50 minutes or until cooked.

BAHASA MALAYSIA VERSION
Kali ni Along mencuba resepi DygJack - ramai yg sudah mencuba resepi ni. Kalau nak tau rasanya kena lah cuba sendiri kan. Kek nya lembut gebu walau pun tanpa telur - tekstur nya mirip seperti kek butter.

Resepi di taip semula utk mudah-rujuk buat Along sendiri
BAHAN2:
250g Mentega*
250ml Susu Cair*
170g Gula Kastor atau Brown Sugar*
(Along buat separuh/separuh)
2 sb Susu Pekat atau Golden Syrup*
300g Mix Fruits (dihiris halus)
360g Tepung Gandum**
2 st Baking Powder**
1 st Soda Bikarbonat** (** ayak 3 kali)
125ml Jus Oren (Along campur separuh Sunquick & separuh air) 
30g Badam Cincang - optional (Along ganti dgn halwa kelapa)

CARA2:
1. Satukan bahan2* ke dalam periuk dan masak hingga larut dan sebati.
Tutupkan api dan terus masukkan mix fruit & gaul.
Biarkan selama 4 jam atau semalaman sehingga buah2an terapung.

2. Masukkan tepung** ke dalam adunan 1 & sebatikan dgn senduk kayu.
Masukkan jus oren & kacau sehingga sebati.
 
3. Tuangkan ke dalam loyang yang disapu dgn mentega dan ditaburkan sedikit tepung. (Guna loyang yang mempunyai lubang di tengahnya supaya kek masak sempurna dan tidak mendap di bahagian tengahnya)
Kemudian taburkan badam cincang.
Bakar 160C selama 40-50 minit
(kepanasan & masa ni Along dah adjust utk kesesuaian oven yg Along gunakan).
