Meh minum petang ngan Steamed Pumpkin Muffins yang best ni. Sedappp betoi rasa labu yang lemak - lemak manis tu. Dah lama Mas simpan resepi mapin labu versi kukus ni, baru ari ni dapat membuatnya. Tapi mapin ni tak berapa nak mekar lak ari ni...naik bertopi lak..he..he...tengok Izah, Aunty Yochana ngan Wendy buat, cantik jerk mapin ni mekar.....hhmmm...gasak la...janji sedapppp...Tengok Daniel suka betoi ngan mapin ni, Ain kurang sikit. Pada Mas memang sedappp mapin ni. Sedappp betoi dimakan sambil minum teh o petang - petang gini. Resepi Mas ambik dari Izahdaut yang baru timbul tu....sakan betoi makcik tu bercuti. Banyak resepi - resepi labu kat dapur Izahdaut tu...jadi rajin - rajin la gali - gali cari resepi kat sana yerk. Kata Izah resepi di ambik dari Aunty Yochana dan resepi asal dari Wendy.
Steamed Pumpkin Muffins
Yields12 steamed muffins (I used egg tart pans)
Ingredients :
- 125gm steamed pumpkin flesh
- 1 egg
- 120gm sugar
- 100gm evaporated milk or coconut milk * Mas dan Izah guna santan
- 30gm corn oil
- 180gm cake flour
- 20gm rice flour
- 1.5tsp baking powder
Method :
- Prepare your steamer and bring the water to a boil
- Put steamed pumpkin flesh, egg, sugar, milk and oil in blender and whizz for 30 seconds.
- Sift cake flour, rice flour and baking powder into a mixing bowl.
- Make a well in the center of the flour mixture and pour the blended ingredients into the well. Mix until well combined.
- Spoon into lined steaming cups and steam on high heat for 15 minutes. It will bloom by itself, no need to make a cross with oil.
